To know your delta extraction process do the test case at dev system
Debug your extractor at source system RSA3 with delta mode. take abap expert help.
Before that ask source team to enter delta records or copy production data to dev environment.
About my statement i can't provide any sap help or document. but its known fact. Standard delta settings for standard data sources never be changed by any clients.
